How does a water filter work and is it really necessary?

A water filter for coffee machines is essential because a cup of coffee consists of 98% to 99% water. Therefore, the quality of the water largely determines the coffee's final taste and the machine's lifespan.

Why is a water filter necessary?

There are three main reasons why filtration is necessary:
  1. Protection against limescale: Hard water contains many dissolved minerals like calcium and magnesium. When this water is heated, limescale precipitates and forms a white, hard layer in the machine. This buildup can clog pipes, pumps, and valves, leading to malfunctions and a shorter machine lifespan.

  2. Taste optimization: Tap water often contains chlorine and other substances that cause "off-flavors" or odors. Chlorine is a strong oxidizer that affects the fats in coffee and hinders the formation of a good crema layer. Furthermore, sulfur compounds in water can mask the subtle floral and fruity notes of the coffee.

  3. Extraction control: Water acts as a solvent that extracts flavor compounds from ground beans. Although a certain amount of minerals (such as calcium and magnesium) is necessary to extract flavor, excessively hard water results in a flat, bitter cup of coffee without nuances.

How does a water filter work?

Depending on the type of filter, different techniques are used to treat the water:
  • Activated carbon filters: This is the most common method for home use. Carbon absorbs impurities responsible for unpleasant odors and tastes, such as chlorine and organic particles. However, it usually has no effect on water hardness (limescale).

  • Ion exchange (Water softening): These filters contain resins that "capture" calcium and magnesium ions (the causes of limescale) from the water and replace them with sodium ions. This prevents limescale formation in the machine. Some advanced filters can also adjust alkalinity to balance the coffee's acidity.

  • Reverse osmosis (RO): In this process, water is forced under pressure through a very fine membrane that retains almost all minerals and impurities. Because completely demineralized water is a poor solvent and can corrode the machine, a small amount of unfiltered water is often mixed in, or minerals are added later to achieve the ideal mineral balance.
Important tip: Never use fully distilled water without additives. The lack of minerals will make the coffee taste acidic and flat, and the high acidity of the water can damage the metal parts of your coffee machine
