Bistro Sophie Eindhoven

Good and relaxed dining is best accompanied by coffee from Koffiepaleis. That’s according to owner Dejan Gavrić of Bistro Sophie in Eindhoven. He says “the whole package” is what makes his restaurant renowned in the region. And quality coffee is part of that, he adds.
At Bistro Sophie, good food is accompanied by conviviality. The restaurant offers fine dining, but without the "stiffness" that often comes with it, says Gavrić. In addition to an à la carte menu with Mediterranean-inspired dishes, guests enjoy the chef's surprise menus. Such a menu is adapted to what someone likes, because arrogance does not fit the informal atmosphere here, according to Gavrić. After dinner, visitors are traditionally treated to two free sweets to go with their coffee or tea.
Gavrić worked as a chef at the Bistro for seven years before taking over the business with his wife. He knew he wanted to be a chef since he was twelve. In addition to his wife, his twin brother works as a sommelier in the restaurant. The rest of the skilled and motivated staff are also part of the family. "The team dynamic in the restaurant is pleasant, and guests notice that too."
With a Michelin mention, Bistro Sophie is a culinary household name in Eindhoven and the surrounding area. The family business attracts various restaurant lovers with its 'casual fine dining'. On weekdays, business guests working at one of the 'booming companies' in the region, such as ASML, Philips, and Daf, often dine here. "On weekends, we see many couples and groups of friends, from young to old. In short, a mix of lovely people comes here."
For Gavrić, the overall experience counts. Delicious flavor combinations fit into that picture, as do delicious wines and a warm ambiance. Good coffee cannot be missed then. Gavrić is clear about it: "I give Koffiepaleis coffee a solid 10." What makes this coffee so special? "The beans roasted in Italy are very beautiful, they are a bit nutty. They are good quality beans with power. As a result, the coffee tastes exactly as coffee should taste."
The collaboration with Koffiepaleis began five years ago when partner Joost spontaneously visited the restaurant. Gavrić: "Joost placed a bag of coffee beans on the bar. We then made the coffee, and it tasted wonderful. Since then, we have been working together very pleasantly. The price-quality ratio is more than excellent, delivery times are fast, and our visitors give us nothing but compliments about the coffee."
In addition to coffee, Bistro Sophie serves ten types of tea from Koffiepaleis. Guests receive these in a strainer so they can determine the strength themselves. The coffee receives a quality treatment here. The beans are ground in-house in a high-quality coffee machine (Ibertal Barcelona), and the cappuccino is also made by hand. The temperature is then just right, and the beautiful foam can be adjusted as desired.
